CCrayfish (Procambarus clarkii; also known as red-swamp crayfish) is really a lobster species (see Taxonomy) and, therefore, not a shrimp species. Crayfish is caught in China in its natural habitat. The species, however, is widely spread around the world because it has been introduced in various places. Crayfish can also be found in the Netherlands in our inland waterways. They are first cooked and then peeled. The product is always used in the same way as shrimp are used in the industry and in gastronomy.
